Sometimes things just don’t go as planned.
The one day you decide to forgo your umbrella the weather gods give you thunder and torrential rain.
The recipe you have been desperately wanting to try turns out disgusting and just straight up intolerable. (That never happens here… oh wait).
The plan to visit the gym for a packed, sweaty, and great workout backtracks and you end up never getting out of your pajamas or leaving your cookie jar’s side. Hey, it can’t fend for itself.
Or take these oreo brownies, for example. I planned for them to be somewhere and they aren’t where they’re supposed to be. Like in my mouth.
It’s impossible not to want these. See for yourself.

These brownies have cast their spell over me. I bet if you give them a wand they could single-handedly take down Harry Potter and Lord Voldemort at the same time. “Expectoooopatroooo” — whatever.
Can I convince you to make these today? What about tomorrow? For a friend’s birthday? Or a Friday? Or any day.

Oreo Stuffed Brownies
adapted from: How Sweet It Is
Ingredients: 1/2 cup butter, softened at room temperature. 1 1/2 cups sugar. 2 eggs. 2 tsp vanilla extract. 3 tbsp cocoa powder. 1 1/4 cups all purpose flour. 1/4 tsp salt. 3/4 cup chocolate chips, divided. 12 oreos, divided. 1 cup hazelnuts.

Preparation: (makes 12 brownies): Preheat oven to 350 degrees and spray an 8×8 cake pan. Beat butter and sugar until creamy and fluffy. Add eggs, one at a time, and vanilla. Add in cocoa powder and mix until combined. Add in flour and salt and mix well until the batter is smooth and creamy. Fold in 1/2 cup chocolate chips. Pour batter into the pan and press 9 oreos until they sink into the batter. Bake for 25-30 minutes.
Meanwhile, blend 1 cup hazelnuts, remaining chocolate chips, and remaining 3 oreos in a food processor and chop. When brownies are finished in the oven, evenly sprinkle the oreo mixture over the brownies. Bake for another 2-3 minutes. Remove from the oven and refrigerate until ready to eat.
