Here’s what I know about muffins.

They taste good. No matter what. Even with blueberries.

Especially with blueberries.

Sugar and butter too. But we’re being healthy here.

They make waking up for morning classes ten thousand times better.

They taste delicious with hot coffee and cream.

Even better two at a time.

They usually aren’t the best choice for putting on that red string bikini of yours — I wouldn’t recommend this for you gentlemen. Just sayin.

But these baked bad boys are f-i-n-e. Yes, they are very nice.

Muffins. For breakfast? Win.

Before a morning class? Well, you can’t win them all.

Doubling up the batch allows you to bring the extra for your friend. Or for your professor. Hey, you need to get that A somehow.

Or for that cute boy in class you can’t stop staring at. We’ve all done it. Even if it is creepy.

Blueberry Muffins for 2

Ingredients: 1/2 cup whole wheat pastry flour. 1 tsp baking powder. 1/8 tsp salt. 1/4 cup fresh blueberries. 1/2 tsp vanilla. 2 tbsp butter. 2 tbsp milk. 3 tbsp pure maple syrup.

Preparation (makes 2 big muffins): Preheat your oven to 330 degrees F. Mix dry ingredients, then add in wet. Mix until just combined — do not overmix. Divide the batter among two muffin liners and bake for 15-17 minutes.
