Skinny Pumpkin Spice Protein Pancakes

I have a wee bit of a problem.

I’m really, really, REALLY (!!!) cold.  Uhhhh, yup…  My house doesn’t have heat.  Yes, it’s a little problematic, folks.  I don’t like this one bit. Neither do my numb little fingers.  Like, for reals, they can’t feel anything…  This is my third attempt at writing a post without typing uncontrollable rant-like-phrases that go a little something like this: enqgbgkvtgbwe egqjf rgfhwoquegq.  SERIOUSLY?!  Do you speak gibberish?

I’ve been living under a layer of sheets, two blankets, and my comforter while wearing the same wool socks, sweatshirt, long underwear, and winter hat for the past 48 hours.  What do you expect me to do?  I can’t change…  Too cold to move.  But I’m thinking of tossing my onesie on under my clothes for protection.  It’s times like these when I wish for an extra layer of blubber.

I’ve lit approximately 11 candles, blow-dryed my clothes to make them warm, and turned on the oven and sat in front of it.  Potentially dangerous, but I’ll take my chances.  I’ve drank ungodly amounts of tea, hot chocolate, coffee, and hot apple cider.  I’ve put socks on my hands.  I’ve puffed out circles with my breath.  I’ve been watching this on replay.  Unsuccessful.  This is torture…  I’d rather listen to Rebecca Black on repeat for like…  13 hours.

If you happen to stop by and see a girl wrapped up in her potato sack of a sleeping bag through the ice-laced windows, it’s probably me hopping around from one place to another.  I don’t want your help if I fall and it takes me a long time to wiggle myself back upright…  Maybe I’ll just remain there in the fetal position.  If you want to help, go out and buy me a present.  A fan heater would work…  Or a box of hand warmers.  Or maybe a new landlord.

Oh geez, I really need to get my act together.  I’m going crazy…  I’ll blame it on the cold and the lack of circulation to my brain.

So I decided noming on pumpkin pancakes would be the best way to stop my chattering teeth.  I made them wearing socks on my hands and ate them while I lay wrapped up in my sleeping bag on the kitchen floor in front of the heating oven.  I guess there’s a first time for everything.

I should really call my landlord.

Skinny Pumpkin Spice Protein Pancakes

(serves 2)

Ingredients:

1/2 cup rolled oats

1 scoop protein powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

pinch of allspice

3-4 packets of stevia (or other no-calorie sweetener)

1/2 cup canned pumpkin

2 egg whites

1/4 cup milk

Preparation:

Heat a nonstick griddle (or nonstick skillet) over medium heat and coat with cooking spray.

In a bowl, mix together dry ingredients. Incorporate the wet, and blend until smooth.

Spoon about 1/4 cup of batter per pancake onto griddle and cook until the center bubbles and the edges cook through.  Turn pancakes to cook the other side.

Serve with maple syrup, whipped cream, peanut butter, chocolate chips, anything.

Nutritional information (about 3 large pancakes): 160 calories, 2g fat, 21g carbs, 13.5g protein, 4.5g fiber

  5. Those pancakes look delicious. :) Sorry to hear about the heating! I guess this time of the year, I consider myself lucky to live in the tropical region – 85 degrees F/30 degrees C!

  6. Hope your heat gets fixed and soon. I would be living by the oven also if I was in that situation. Your pancakes do look tasty and a nice treat to help chase the chill away.

    I know how you feel, my landlord somehow forgot to turn up the heating last winter and it was freezing cold, I lived under blankets and with mugs of tea glued to my hands as well, not fun! Hope your problem will get fixed soon!Those pancakes look great though, good thing you have them around to comfort you :D
