Peanut Butter Quinoa with Apples and Honey

Hello, world.

1. My roommate sent me this a couple of days ago. I can tolerate this mockery… bring it on, Sarah. At least I don’t drink those icky green protein shakes.

2. Speaking of which, I did try my first EVER green monster smoothie… that is, if you count one spinach leaf as qualifying. I still didn’t like the green color. So I put it on a stainless steal coffee mug and chugged it down before I had time to think I had just blended strawberries and yogurt with vegetables. Ew yuck, no thank you.

3. Our little grey house is more spacious now… with two less mice (sorry mice). And a half cup less of pistachios…

I know what you’re thinking. Not peanut butter and honey. Nope, not happening. Oh but believe me… it’s happened. Don’t run away. Let me plead my case. And friends, if you’re skeptical about the peanutbutterhoney combo, don’t be. Heck, I was… for about a day. My friend told me that I HAD to try it because it was delicious. I didn’t believe him. But guess what? I did it… I tried it.

And I loved it.

Peanut butter and honey ain’t so bad together. In fact, it’s really good! Throw in some apple bits and perhaps a touch of cinnamon. Total magic. For realsies. Give this dynamic duo a shot.

There is nothing unhealthy about this dish… cause it’s full of wholesome good-for-you ingredients like quinoa, peanut butter, honey, and apples! A nice big bowl of this is nothing short of perfection.

But wait! This dish is also super adaptable. Do whatever, peeps… it’s all good! Forgo the apples and add in raisins. Don’t want honey? Try maple syrup. Or throw in some toasted almonds. Heck, make yourself a healthy treat and add some chocolate chips.

Yes, this dish is the answer to my problems. Unless you’re like me and choose to double triple the amount of peanut butter. #katieproblems. You all know me and peanut butter are likethis.

What can I say?

“I’d like to have the peanut butter, please, with the quinoa and honey on the side… thanks.”

Peanut Butter Quinoa with Apples and Honey

Ingredients:

1/2 cup uncooked quinoa

1 cup water (for cooking)

2 tbsp chunky natural peanut butter

1 tbsp honey

1 large apple, finely chopped

Preparation:

(makes 2 servings)

Cook quinoa in a medium pot according to cooking directions.

While quinoa cooks, dice apple into small pieces. Measure out peanut butter and honey. Set aside.

Once quinoa is done, remove from heat. Add in diced apple, peanut butter, and honey. Stir together until all is combined. Serve warm.

  1. I’ve always wanted to try a sweet breakfasty quinoa bowl, but was 1. too afraid and 2. had no inspiration. This is one I think I MUST try!

    this looks so delicious and nutritious! i am also a complete peanut-butter addict and have discovered how amazing it goes with honey when i first tried the “honey-roasted peanut butter” from whole foods, which is freshly grinded! you MUST try! quinoa is such a powerful food thats so hard to incorporate into our diets so i lovee how you pulled this off. fabulous!

    this weekend i had my very first pb + marshmallow fluff sandwich though.. and I think I may have a new favorite pb sidekick!

      I LIVED off peanut butter and fluff as a kid… it would be an understatement to say I had a sandwich every single day. My mom would fully back me up on this… they are SO good.

      pb and honey is the most delicious combo! The Bees Knees is one of my favorites! PB and Co also makes something called “The Jerry Seinfeld” which is just pb, honey, and cinnamon on a toasted bagel. I do this often for breakfast on regular toast. I love it!

    I don’t think there’s anything wrong with peanut butter and honey, I love it! In fact, I like peanut butter with anything sweet (example: dulce de leche or nutella, talk about bomb!). This dish is great, very nutritious and delicious!
