Nutella Rice Krispies with Chopped Hazelnuts

Where did you find comfort this weekend?

My wonky bonkers brain refuses to slow down even for just a minute.  I’m always thinking about all the things I need to do, one after another…

“Gosh I should really change my sheets.  And I should probably do my laundry because I can’t keep wearing my bikini bottoms.  Oh and I need to send that letter, run to the library, get my oil changed, check in on my friend, and call my parents to let them know I’m not dead.  Oh!  Oh oh!  And today is totally the day I’m going to stop buying chocolate covered pomegranates that cost 10 bucks a bag and make me feel 10 pounds heavier the next day.”

You know, those sort of things.

But I found comfort this weekend.  I found peace and relaxation. I found it in warm, sunny mornings.  I found it in my 8-year-old blue slippers.  I found it in live music and outdoor eating, in afternoon yoga, in homemade waffles and in cups of coffee sipped out on the back porch.  I found comfort in journaling, walking, and just taking things one step at a time.

I also found comfort in Nutella.

I found a dessert that just happens to deliver comfort and slow time down, even if it’s just for a moment or two.  This particular rice krispies treat recipe is made with Nutella and hazelnuts…  A total childhood memory throwback.  Imagine big swirls of big, soft marshmallows, chewy rice krispies, smooth chocolatey spread, and small punches of nutty flavor.  Utterly perfect.

Between all the good things going on around here…  I feel like this is a super comforting, coma inducing, time stopping treat.  It’s pretty fantastic, if you ask me.

So do me a favor this week, will ya?  Write this recipe down and keep it posted on your refrigerator.  You may not think that this is the time to slow down and relax…  But maybe it is?  Maybe this recipe will be your perfect mid-week comfort food recipe.  And yes, two of these could totally count as dinner.

Nutella Rice Krispies with Chopped Hazelnuts


3 cups brown rice krispies

2 tablespoons butter

4 cups miniature marshmallows

1/2 cup, plus 2 tbsp Nutella

1/2 cup hazelnuts, chopped or processed


Place a 8×8 square baking pan on the counter and line with parchment paper.  Measure out rice krispies and place in a medium bowl.  Set aside.

Melt butter on the stove top in a medium pot over medium heat.  One cup at a time, add the marshmallows.

After all marshmallows have been poured in and in the process of melting, add 2 tablespoons of Nutella and mix the entire batter very well with a spatula until everything is combined.

Slowly pour in the rice krispies. Stir until all is combined and batter is sticky, about 1-2 minutes.

Remove pot from stove top and pour contents into prepared square pan. Using the back of the spatula or your fingertips, gently press down on the rice krispie treats and allow them to harden.

After 10 minutes or so, once the rice krispies begin to cool, heat the remaining 1/2 cup of Nutella in the microwave until warm.  Remove and spread onto the top of the treats, coating evenly with a spatula.  Top with chopped hazelnuts.

Place the treats in the refrigerator until ready to eat.  Cut into 9 squares and serve.

    Look at all of this Nutella. SImply incredible. I was on a Nutella kick for awhile and I jus thane to bring it back! Oh and rice krispie treats? my favorite!
