Streusel Coffee Cake Muffins
I had a dream last night.
I dreamt that I owned my own cafe slash bakery… Which got me thinking about the future. Yes… Dreams can do that. Preferably a place where you “pay what you can”… Because quality of life is more important than profit. Where people would rather buy each other drinks than get snippy about long lines or the weather. Where you can sneak away for a little and relax with some good food and nice music. Preferably close to a sports bar somewhere so I can pick up cute dudes who stumble in. Oh, you sneaky little Katie.
I’d want a place where I each mug, plate, and customer were distinct from one another and no two orders the same. Where the food was hand-crafted individually for your satisfaction. Where I could call each and every one of you by your name, or simply by “Sugar” and “Pumpkin.”
Everyone would be welcome… Girl, boy, black, white, purple, Asian, Africa, Antarctican, or Swiss (I hear they’re nice). Rich, poor, preppy, vintage, religious, intellectual, or high on… Life. Teachers, doctors, hippies, pastors, babies, homeless wanderers, coffee fiends, strangers, and even puppies… Like the one below.
I hope the place I build creates an atmosphere where you can enjoy life and take the time to be nice to those around you, whether they are strangers or not. I want it to be a place that allows you to fuel your body and enrich your lives with only the freshest, tastiest, and most wholesome ingredients. Yes, butter. Yes, whole wheat flour. And yes, everything in between. It’s all goldilocks up in here… Everything needs to be just right.
I’d want a place that accepts innovation, creativity, social justice, and a little bit of weirdness, just for kicks. I’d hope the customers are up for chatting and kiddies can grab a muffin and play together while random strangers talk about their favorite bible verse, their favorite Borat quote, or their favorite U2 song. Where the guy in front decides to pay for the person behind of him just as a way of saying hello. I’d want to create a place where people don’t just eat or drink… They belong.
And the first thing about belonging begins with muffins.
Streusel Coffee Cake Muffins

(yields 12 muffins)
For the Muffins:
1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
3 large eggs
1/2 cup granulated sugar
1 cup plain Greek yogurt
5 tbsp unsalted butter, melted and cooled
For Streusel Filling & Topping:
1/2 cup brown sugar, unpacked
1/2 cup rolled oats
1/4 tsp cinnamon
pinch of salt
3 tbsp cold unsalted butter, cut into pieces
To make the muffins:
Preheat oven to 350 degrees F and line a muffin tin with liners or cooking spray.
In a medium bowl, mix together flours, baking powder, cinnamon, baking soda and salt. In a larger bowl, whisk together eggs and sugar until smooth. Add in yogurt, stirring until consistency is smooth and thick. Stir in cooled butter. Fold in the dry ingredients and mix until combined.
To make streusel filling & topping:
In a small bowl, mix together brown sugar, oats, cinnamon and salt. Cut in cold butter pieces using a fork or your fingers, mixing together until small crumbs form. Set aside.
Fill the muffin tins almost halfway full with batter, then sprinkle with some of the streusel topping, making sure to slightly press down so the filling bakes together. Add another few spoonfuls of batter on top, then sprinkle tops with another handful of the streusel mixture.
Bake for 20-25 minutes, or until golden on top. Serve hot with butter!
